Spiced Baby Brinjals (Eggplants)

Ingredients:
- 10 brinjals sliced into thin circles approx. 1/4 inch width
- 1/2 tsp roasted cumin powder
- 1/2 tsp amchoor powder
- 1/2 tsp salt
- 1/2 tsp chat masala
- 1/2 tsp red chilli powder
- 1/4 tsp garam masala
- 1/2 cup atta (wheat flour)
Method:
- Slice brinjals and place them all seperately on a plate.
- Mix all the spices in a bowl and sprinkle them liberally on the brinjals.
- Flip the brinjals and sprinkle spice mix again.
- Sprinkle wheat flour on brinjals.
- Put a non stick flat pan on gas and spray some cooking oil.
- Place brinjal slices with wheat flour on the pan on medium flame and cook for 2 mins.
- Flip the brinjals and spray oil liberally.
- Cook till crisp.
- When brinjals will be roasted brown on the top they are ready to serve.
- Enjoy with white bread, ketchup and mint chutney.
